Ingredients - Serves 2
- Toasted sesame oil - 1 teaspoon
- Green onions - 2, sliced
- Bok choy - 2 baby bok choy, chopped
- Mushrooms - 4 ounces, sliced
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Mirin - 1 tablespoon
- Soy sauce - 2 tablespoons
- Vegetable broth - 4 cups
- Udon noodles - 8 ounces
Let's Get Started
- Cook the udon noodles according to package instructions. Drain and set aside.
- In a large pot, combine the vegetable broth, soy sauce, mirin, ginger, and garlic. Bring to a boil.
- Add the mushrooms and bok choy to the pot. Simmer for 5 minutes, or until the vegetables are tender.
- Divide the cooked udon noodles between two bowls.
