Turrón
Turrón is a traditional Spanish nougat dessert typically consumed during the Christmas season. This recipe is for Turrón de Alicante, the hard, white almond variety.
Ingredients - Serves 10
- Wafer paper - 2 sheets
- Almonds - 2 cups, toasted and whole
- Egg white - 1
- Sugar - 1/2 cup
- Honey - 1 cup

- Place the honey in a saucepan and heat it over medium heat until it becomes liquid.
- In a separate bowl, beat the egg white until it forms soft peaks.
- Slowly add the sugar to the egg white, continuing to beat until it forms stiff peaks.
- Slowly pour the hot honey into the egg white mixture, beating continuously.
- Continue to beat the mixture until it becomes thick and white.
- Fold in the toasted almonds.
- Line a baking dish with one sheet of wafer paper.
- Pour the almond mixture into the dish, spreading it evenly.
- Cover the mixture with the second sheet of wafer paper and press down firmly.
- Let the turrón cool and harden, then cut it into squares before serving.
