Panforte
Panforte is a traditional Italian dessert containing fruits and nuts, and resembles fruitcake or Lebkuchen.
Ingredients - Serves 12
- Icing sugar - For dusting
- Wafer paper - 1 sheet
- Black pepper - 1/4 teaspoon
- Cloves - 1/4 teaspoon
- Nutmeg - 1/4 teaspoon
- Cinnamon - 1 teaspoon
- Cocoa powder - 2 tablespoons
- Flour - 1/2 cup
- Candied orange peel - 1/2 cup, chopped
- Candied citron - 1/2 cup, chopped
- Hazelnuts - 1 cup, toasted and roughly chopped
- Almonds - 1 cup, toasted and roughly chopped
- Sugar - 3/4 cup
- Honey - 3/4 cup
Let's Get Started
- Preheat the oven to 150°C (300°F) and line a 20cm (8 inch) cake tin with the wafer paper.
- In a saucepan, combine the honey and sugar and heat gently until the sugar has dissolved.
- In a large bowl, combine the almonds, hazelnuts, candied citron, candied orange peel, flour, cocoa powder, cinnamon, nutmeg, cloves, and black pepper.
- Pour the warm honey and sugar mixture into the bowl with the dry ingredients and mix well.
- Transfer the mixture to the prepared cake tin and smooth the top with a wet spatula.
- Bake for 30 minutes, then remove from the oven and let cool completely.
- Once cooled, dust the top of the panforte with icing sugar.
