Turkish Kisir Salad

Ingredients - Serves 4
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Ground paprika - 1 teaspoon
- Ground cumin - 1 teaspoon
- Pomegranate molasses - 2 tablespoons
- Olive oil - 3 tablespoons
- Lemon juice - 3 tablespoons
- Fresh mint - 1/4 cup, chopped
- Fresh parsley - 1/2 cup, chopped
- Green onions - 4, thinly sliced
- Cucumber - 1 medium, diced
- Tomatoes - 2 medium, diced
- Fine bulgur - 1 cup
Let's Get Started
- Place the bulgur in a large bowl and cover with boiling water. Let it sit for 10 minutes, then drain any excess water.
- Add the diced tomatoes, cucumber, green onions, parsley, and mint to the bowl with the bulgur.
- In a separate small bowl, whisk together the lemon juice, olive oil, pomegranate molasses, cumin, paprika, salt, and black pepper.
- Pour the dressing over the salad ingredients and toss well to combine.
