  1. Soak the tripe in cold water for 24 hours, changing the water several times.
  2. In a large pot, heat the olive oil over medium heat. Add the onions and garlic and cook until soft.
  3. Add the tripe, pork ear, pork snout, chicken, chorizo, carrots, bay leaves, salt, and pepper. Cover with water and bring to a boil.
  4. Reduce the heat and simmer for 2 hours, or until the tripe is tender.
  5. In a separate pot, cook the beans in boiling water until tender. Drain and add to the tripe stew.
  6. Simmer for another 30 minutes. Adjust the seasoning if necessary.
  7. Serve the Tripas à Moda do Porto hot, with bread on the side.
