Tripas À Moda Do Porto
Tripas à Moda do Porto is a traditional Portuguese dish from the city of Porto. It's a hearty stew made with various types of meat, beans, and vegetables.

- Bay leaves - 2
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onions - 2, chopped
- Carrots - 2, sliced
- Chorizo - 2, sliced
- Chicken - 1, cut into pieces
- Pork snout - 1, cleaned and cut into pieces
- Pork ear - 1, cleaned and cut into pieces
- White beans - 500 grams, soaked overnight
- Pork tripe - 1 kg, cleaned and cut into pieces
Let's Get Started
- Soak the tripe in cold water for 24 hours, changing the water several times.
- In a large pot, heat the olive oil over medium heat. Add the onions and garlic and cook until soft.
- Add the tripe, pork ear, pork snout, chicken, chorizo, carrots, bay leaves, salt, and pepper. Cover with water and bring to a boil.
- Reduce the heat and simmer for 2 hours, or until the tripe is tender.
- In a separate pot, cook the beans in boiling water until tender. Drain and add to the tripe stew.
- Simmer for another 30 minutes. Adjust the seasoning if necessary.
- Serve the Tripas à Moda do Porto hot, with bread on the side.
