Ingredients - Serves 4

Let's Get Started

  1. Peel the plantains and cut them into 1-inch thick slices.
  2. Heat the oil in a large frying pan over medium heat. Add the plantain slices and fry until golden brown on both sides.
  3. Remove the plantains from the pan and flatten them with a tostonera or the bottom of a glass.
  4. Return the flattened plantains to the pan and fry again until crispy. Remove from the pan and sprinkle with salt.
  5. In a separate pan, sauté the garlic, onion, and bell pepper until soft. Add the shrimp and tomato sauce and cook for a few minutes until heated through.
  6. Spoon the shrimp mixture onto each tostone and top with shredded cheese.
  7. Serve the tostones rellenos warm.
