Tostones Rellenos
Tostones Rellenos are a delicious and popular Puerto Rican dish. They are fried plantains stuffed with a variety of fillings, such as shrimp, beef, or cheese.
Ingredients - Serves 4
- Tomato sauce - 1/2 cup
- Bell pepper - 1, finely chopped
- Onion - 1, finely chopped
- Garlic - 2 cloves, minced
- Cheese - 1 cup, shredded
- Shrimp - 1 cup, cooked and chopped
- Salt - To taste
- Vegetable oil - For frying
- Green plantains - 4
Let's Get Started
- Peel the plantains and cut them into 1-inch thick slices.
- Heat the oil in a large frying pan over medium heat. Add the plantain slices and fry until golden brown on both sides.
- Remove the plantains from the pan and flatten them with a tostonera or the bottom of a glass.
- Return the flattened plantains to the pan and fry again until crispy. Remove from the pan and sprinkle with salt.
- In a separate pan, sauté the garlic, onion, and bell pepper until soft. Add the shrimp and tomato sauce and cook for a few minutes until heated through.
- Spoon the shrimp mixture onto each tostone and top with shredded cheese.
- Serve the tostones rellenos warm.
