  1. Heat olive oil in a non-stick skillet over medium heat.
  2. Add the sliced potatoes and cook until golden brown and crispy, about 5-7 minutes.
  3. Remove the potatoes from the skillet and set aside.
  4. In the same skillet, add the chopped onion and cook until translucent, about 2-3 minutes.
  5. In a bowl, beat the eggs and season with salt and black pepper.
  6. Add the cooked potatoes and onions to the beaten eggs and mix well.
  7. Heat a small non-stick skillet over medium heat and pour in the egg mixture.
  8. Cook for 3-4 minutes, or until the bottom is set.
  9. Flip the tortilla and cook for an additional 2-3 minutes, or until cooked through.
  10. In a separate cup, prepare a shot of espresso.
  11. In a saucepan, heat the milk until hot but not boiling.
  12. Using a frother or whisk, froth the milk until it becomes creamy and foamy.
  13. Pour the frothed milk into a latte glass.
  14. Add the shot of espresso to the frothed milk.
  15. Gently place the cooked tortilla on top of the latte.
  16. Serve hot and enjoy!
