Tortilla de Patatas, also known as Spanish Omelette, is a classic Spanish dish consisting of a thick egg omelette made with potatoes and fried in olive oil.

- Salt - To taste
- Eggs - 6 large
- Onion - 1 large, thinly sliced
- Potatoes - 4 medium, thinly sliced
- Olive oil - 1/2 cup
Let's Get Started
- Heat the olive oil in a large frying pan over medium heat.
- Add the potatoes and onion to the pan, making sure they are fully submerged in the oil. Cook until they are soft, about 10 minutes.
- In a large bowl, beat the eggs and season with salt.
- Using a slotted spoon, remove the potatoes and onions from the pan and add them to the beaten eggs.
- Pour the egg mixture into the pan and cook over medium heat until the bottom is golden and set, about 10 minutes.
- Flip the tortilla using a large plate and cook on the other side for another 10 minutes, or until golden and set.
- Slide the tortilla onto a plate and let it cool for a few minutes before serving.
