  1. Heat the olive oil in a large frying pan over medium heat.
  2. Add the potatoes and onion to the pan, making sure they are fully submerged in the oil. Cook until they are soft, about 10 minutes.
  3. In a large bowl, beat the eggs and season with salt.
  4. Using a slotted spoon, remove the potatoes and onions from the pan and add them to the beaten eggs.
  5. Pour the egg mixture into the pan and cook over medium heat until the bottom is golden and set, about 10 minutes.
  6. Flip the tortilla using a large plate and cook on the other side for another 10 minutes, or until golden and set.
  7. Slide the tortilla onto a plate and let it cool for a few minutes before serving.
