Torta Paradiso
Torta Paradiso, also known as Paradise Cake, is a soft and light Italian dessert that originated in Pavia. It's a perfect blend of sponge cake and pastry cream.
Ingredients - Serves 8
- Powdered sugar - For dusting
- Baking powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Lemon zest - 1 teaspoon
- Potato starch - 100 grams
- Flour - 200 grams
- Eggs - 4
- Sugar - 200 grams
- Butter - 200 grams
Let's Get Started
- Preheat the oven to 180°C (350°F) and butter and flour a 24 cm (9 inch) cake pan.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- In a separate bowl, combine the flour, potato starch, and baking powder.
- Gradually add the dry ingredients to the butter mixture, mixing well after each addition.
- Stir in the lemon zest and vanilla extract.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Let the cake cool in the pan for 10 minutes, then turn it out onto a wire rack to cool completely.
- Before serving, dust the top of the cake with powdered sugar.
