Torta Di Pistacchio
A rich and moist Italian cake made with ground pistachios and almond flour, topped with a sweet pistachio glaze.
Ingredients - Serves 8
- Chopped pistachios - For garnish
- Pistachio milk - 2 tablespoons
- Powdered sugar - 1 cup
- For the glaze: -
- Salt - 1/4 teaspoon
- Baking powder - 1 teaspoon
- Vanilla extract - 1 teaspoon
- Butter - 1/2 cup, melted
- Eggs - 4
- Sugar - 1 cup
- Almond flour - 1 cup
- Pistachios - 1 cup, ground
Let's Get Started
- Preheat the oven to 350°F and grease a 9-inch cake pan.
- In a large bowl, combine the ground pistachios, almond flour, sugar, eggs, melted butter, vanilla extract, baking powder, and salt.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- While the cake is cooling, make the glaze by whisking together the powdered sugar and pistachio milk until smooth.
- Once the cake is cool, drizzle the glaze over the top and garnish with chopped pistachios.
