Tomato Soup with a Grilled Cheese Sandwich
A comforting and classic combination of tomato soup and grilled cheese sandwich.
Ingredients - Serves 2
- Butter - 2 tablespoons
- Cheddar cheese - 4 slices
- Bread - 4 slices
- Salt and pepper - To taste
- Sugar - 1 teaspoon
- Tomato paste - 2 tablespoons
- Vegetable broth - 2 cups
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Tomatoes - 4 large, diced
Let's Get Started
- In a large pot, heat some olive oil over medium heat.
- Add the chopped onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.
- Add the diced tomatoes, vegetable broth, tomato paste, sugar, salt, and pepper. Stir well.
- Bring the mixture to a boil, then reduce the heat and let it simmer for 20 minutes.
- Using an immersion blender or a regular blender, puree the soup until smooth.
- Season with additional salt and pepper if needed.
- Preheat a skillet or griddle over medium heat.
- Spread butter on one side of each bread slice.
- Place a slice of cheddar cheese between two slices of bread, with the buttered sides facing outwards.
- Grill the sandwich on the skillet or griddle until the bread is golden brown and the cheese is melted.
- Repeat with the remaining bread and cheese slices.
- Serve the tomato soup hot with the grilled cheese sandwich on the side.
