Tofu Scramble with Vegetables
A healthy and delicious vegan breakfast option, this tofu scramble is packed with vegetables and spices.
Ingredients - Serves 4
- Tomatoes - 2, diced
- Spinach - 2 cups
- Salt and pepper - To taste
- Cumin - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Garlic - 2 cloves, minced
- Bell peppers - 2, diced
- Onion - 1, diced
- Olive oil - 2 tablespoons
- Firm tofu - 1 block, drained and crumbled
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the onion, bell peppers, and garlic and sauté until the vegetables are soft, about 5 minutes.
- Add the crumbled tofu, turmeric, cumin, salt, and pepper and stir to combine.
- Cook for another 5 minutes, stirring occasionally.
- Add the spinach and tomatoes and cook until the spinach is wilted and the tomatoes are heated through, about 2 minutes.
- Serve the tofu scramble hot, with toast or tortillas if desired.
