Tofu Scramble with Vegetables

Ingredients - Serves 4

Let's Get Started

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the onion, bell peppers, and garlic and sauté until the vegetables are soft, about 5 minutes.
  3. Add the crumbled tofu, turmeric, cumin, salt, and pepper and stir to combine.
  4. Cook for another 5 minutes, stirring occasionally.
  5. Add the spinach and tomatoes and cook until the spinach is wilted and the tomatoes are heated through, about 2 minutes.
  6. Serve the tofu scramble hot, with toast or tortillas if desired.
