Tlacoyos
Tlacoyos are traditional Mexican street food. They are thick corn dough tortillas stuffed with beans, cheese, or other ingredients, and often topped with salsa and cactus.
Ingredients - Serves 4
- Salt - To taste
- Cactus - 1 cup, cooked and chopped
- Salsa - 1 cup
- Queso fresco - 1 cup, crumbled
- Refried beans - 1 cup
- Warm water - 1 1/2 cups
- Masa harina - 2 cups
Let's Get Started
- In a large bowl, mix the masa harina with the warm water and a pinch of salt until a soft dough forms.
- Divide the dough into 8 equal portions and shape each one into a ball.
- Flatten each ball into a disc and place a spoonful of refried beans in the center. Fold the dough over the beans and seal the edges, then shape into an oval.
- Heat a griddle or skillet over medium heat. Cook the tlacoyos for about 5 minutes on each side, or until they are golden and crispy.
- Top the tlacoyos with the crumbled queso fresco, salsa, and cooked cactus. Serve hot.
