Picaditas
Picaditas are a traditional Mexican dish made with corn dough, topped with refried beans, salsa, and cheese.
Ingredients - Serves 4
- Vegetable oil - For frying
- Queso fresco - 1 cup, crumbled
- Salsa - 1 cup
- Refried beans - 1 cup
- Salt - 1/2 teaspoon
- Water - 1 1/2 cups
- Masa harina - 2 cups
Let's Get Started
- In a large bowl, combine the masa harina, water, and salt. Knead until the dough is smooth and pliable.
- Divide the dough into 8 equal portions and shape each one into a small disc.
- Heat the oil in a large skillet over medium heat.
- Fry the dough discs in the hot oil until they are golden brown on both sides, about 2 minutes per side.
- Remove the picaditas from the oil and drain on paper towels.
- Spread a layer of refried beans on each picadita, followed by a spoonful of salsa and a sprinkle of queso fresco.
- Serve the picaditas warm.
