Three Bean Chili
A hearty and healthy chili made with a variety of beans and vegetables. Perfect for a cold day!
Ingredients - Serves 6
- Salt and pepper - To taste
- Vegetable broth - 2 cups
- Diced tomatoes - 1 can
- Pinto beans - 1 can, drained and rinsed
- Black beans - 1 can, drained and rinsed
- Kidney beans - 1 can, drained and rinsed
- Cumin - 1 tablespoon
- Chili powder - 2 tablespoons
- Red bell pepper - 1, chopped
- Green bell pepper - 1, chopped
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, and bell peppers and cook until softened, about 5 minutes.
- Add the chili powder and cumin and cook for another minute.
- Add the beans, tomatoes, and vegetable broth. Season with salt and pepper.
- Bring to a boil, then reduce the heat and simmer for 45 minutes, stirring occasionally.
- Serve hot with your favorite chili toppings.
