Thai Peanut Tempeh Noodles

Let's Get Started

  1. Cook the rice noodles according to the package instructions. Drain and set aside.
  2. In a bowl, whisk together the peanut butter, soy sauce, lime juice, brown sugar, garlic, ginger, and red pepper flakes. Set aside.
  3. Heat the vegetable oil in a pan over medium heat. Add the tempeh and cook until browned on all sides, about 5 minutes.
  4. Add the peanut sauce to the pan and stir to coat the tempeh. Cook for another 2-3 minutes.
  5. Add the cooked noodles to the pan and toss to combine with the tempeh and sauce.
  6. Serve the noodles topped with the green onions, cilantro, and peanuts.
