Thai Peanut Tempeh Noodles
A delicious and healthy vegan dish, these Thai peanut tempeh noodles are packed with flavor and protein.
Ingredients - Serves 4
- Peanuts - 1/4 cup, chopped
- Cilantro - 1/4 cup, chopped
- Green onions - 4, sliced
- Vegetable oil - 2 tablespoons
- Red pepper flakes - 1/2 teaspoon
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Brown sugar - 1 tablespoon
- Lime juice - 2 tablespoons
- Soy sauce - 1/4 cup
- Peanut butter - 1/2 cup
- Rice noodles - 8 ounces
- Tempeh - 8 ounces, cubed
Let's Get Started
- Cook the rice noodles according to the package instructions. Drain and set aside.
- In a bowl, whisk together the peanut butter, soy sauce, lime juice, brown sugar, garlic, ginger, and red pepper flakes. Set aside.
- Heat the vegetable oil in a pan over medium heat. Add the tempeh and cook until browned on all sides, about 5 minutes.
- Add the peanut sauce to the pan and stir to coat the tempeh. Cook for another 2-3 minutes.
- Add the cooked noodles to the pan and toss to combine with the tempeh and sauce.
- Serve the noodles topped with the green onions, cilantro, and peanuts.
