Thai Green Prawn Curry
This Thai green prawn curry is a flavorful and aromatic dish made with fresh prawns, green curry paste, coconut milk, and a variety of spices.
Ingredients - Serves 4
- Salt - To taste
- Vegetable oil - 2 tablespoons
- Bell peppers - 1, sliced
- Green beans - 1 cup, trimmed and halved
- Red chili peppers - 2, sliced
- Thai basil leaves - 1/4 cup, chopped
- Kaffir lime leaves - 4 leaves, torn
- Sugar - 1 teaspoon
- Fish sauce - 2 tablespoons
- Coconut milk - 1 can (400 ml)
- Green curry paste - 2 tablespoons
- Prawns - 500 grams
Let's Get Started
- Heat the vegetable oil in a large pan over medium heat.
- Add the green curry paste and cook for 1-2 minutes until fragrant.
- Add the prawns and cook until they turn pink and are cooked through, about 3-4 minutes.
- Add the coconut milk, fish sauce, sugar, kaffir lime leaves, and sliced chili peppers. Stir well to combine.
- Bring the mixture to a simmer and cook for 5 minutes.
- Add the green beans and bell peppers. Cook for an additional 2-3 minutes until the vegetables are tender-crisp.
- Season with salt to taste.
- Remove from heat and stir in the chopped Thai basil leaves.
- Serve the Thai green prawn curry hot with steamed rice or noodles.
