Tfaya
Tfaya is a traditional Moroccan dish made with caramelized onions, raisins, and spices. It is often served with couscous or rice.
Ingredients - Serves 6
- Cilantro - 2 tablespoons, chopped
- Almonds - 1/4 cup, sliced
- Cinnamon sticks - 2
- Honey - 2 tablespoons
- Water - 1/2 cup
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Ground coriander - 1/2 teaspoon
- Ground cumin - 1/2 teaspoon
- Ground turmeric - 1/2 teaspoon
- Ground ginger - 1/2 teaspoon
- Cinnamon - 1 teaspoon
- Raisins - 1/2 cup
- Olive oil - 3 tablespoons
- Onions - 4 large, thinly sliced
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the sliced onions and cook until caramelized, stirring occasionally, for about 30 minutes.
- Add the raisins, cinnamon, ginger, turmeric, cumin, coriander, salt, and black pepper. Stir well to combine.
- Pour in the water and honey. Add the cinnamon sticks.
- Cover the pot and simmer for 30 minutes, stirring occasionally.
- In a separate pan, toast the sliced almonds until golden brown.
- Serve the tfaya over couscous or rice, garnished with toasted almonds and chopped cilantro.
