Tex Mex Chili

- Green onions - For garnish
- Sour cream - For serving
- Cheddar cheese - 1 cup, shredded
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Chili powder - 2 tablespoons
- Green bell pepper - 1, chopped
- Diced tomatoes - 1 can
- Black beans - 1 can, drained and rinsed
- Kidney beans - 1 can, drained and rinsed
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Ground beef - 1 pound
Let's Get Started
- In a large pot, cook the ground beef over medium heat until browned. Drain the fat.
- Add the onion, garlic, and bell pepper to the pot and cook until softened.
- Add the kidney beans, black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Stir to combine.
- Cover the pot and simmer for 45 minutes, stirring occasionally.
- Serve the chili hot, topped with shredded cheddar cheese, a dollop of sour cream, and a sprinkle of green onions.
