Tempura
Tempura is a traditional Japanese dish consisting of battered and deep-fried seafood, vegetables, or other ingredients.
Ingredients - Serves 4
- Dipping sauce - For serving
- Salt - To taste
- Vegetable oil - For frying
- Ice cubes - 4-5
- Cold water - 1 cup
- Cornstarch - 1/2 cup
- All-purpose flour - 1 cup
- Assorted vegetables - 1 cup, thinly sliced (e.g. bell peppers, zucchini, sweet potatoes)
- Shrimp - 12 large, peeled and deveined
Let's Get Started
- In a large bowl, combine the all-purpose flour and cornstarch.
- Add the cold water and ice cubes to the flour mixture and stir until just combined. Do not overmix; the batter should be lumpy.
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
- Dip the shrimp and vegetables into the batter, allowing any excess batter to drip off.
- Carefully place the battered ingredients into the hot oil and fry until golden brown and crispy, about 2-3 minutes per side.
- Remove the tempura from the oil and drain on a paper towel-lined plate.
- Season with salt to taste.
- Serve the tempura hot with dipping sauce on the side.
