Tempeh Tacos
These vegan tempeh tacos are packed with flavor and protein. They're easy to make and perfect for a quick weeknight dinner.
Ingredients - Serves 4
- Vegan cheese - 1 cup, shredded
- Avocado - 1, sliced
- Tomato - 1 medium, chopped
- Lettuce - 1 cup, shredded
- Taco shells - 8
- Water - 1/2 cup
- Taco seasoning - 1 packet
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Olive oil - 2 tablespoons
- Tempeh - 8 ounces, crumbled
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook until the onion is soft, about 5 minutes.
- Add the crumbled tempeh and taco seasoning and stir to combine.
- Add the water and simmer until the water has evaporated and the tempeh is fully coated in the seasoning, about 5 minutes.
- Heat the taco shells according to the package instructions.
- Fill each taco shell with the tempeh mixture, lettuce, tomato, avocado, and vegan cheese.
- Serve immediately.
