Let's Get Started

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds. Set aside.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the onion and garlic and cook until softened, about 5 minutes.
  5. Add the crumbled tempeh, tomato sauce, cumin, chili powder, salt, and pepper. Cook for another 5 minutes.
  6. Stuff the bell peppers with the tempeh mixture and place in a baking dish.
  7. Top each pepper with shredded cheese.
  8. Bake for 30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
