Tempeh Stuffed Bell Peppers
These hearty stuffed bell peppers are filled with tempeh, vegetables, and spices for a delicious and healthy meal.
Ingredients - Serves 4
- Shredded cheese - 1 cup
- Salt and pepper - To taste
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Tomato sauce - 1 cup
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Olive oil - 2 tablespoons
- Bell peppers - 4 large
- Tempeh - 8 ounces, crumbled
Let's Get Started
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds. Set aside.
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the crumbled tempeh, tomato sauce, cumin, chili powder, salt, and pepper. Cook for another 5 minutes.
- Stuff the bell peppers with the tempeh mixture and place in a baking dish.
- Top each pepper with shredded cheese.
- Bake for 30 minutes, or until the peppers are tender and the cheese is melted and bubbly.
