Tembleque
Tembleque is a traditional Puerto Rican coconut pudding that is creamy, sweet, and delicious.
Ingredients - Serves 6
- Salt - 1/4 teaspoon
- Ground nutmeg - 1/4 teaspoon
- Cinnamon - 1/2 teaspoon
- Vanilla extract - 1 teaspoon
- Sugar - 1/2 cup
- Cornstarch - 1/2 cup
- Coconut milk - 2 cups
Let's Get Started
- In a saucepan, combine the coconut milk, cornstarch, sugar, vanilla extract, cinnamon, nutmeg, and salt.
- Whisk the mixture until the cornstarch is fully dissolved.
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a gentle boil.
- Reduce the heat to low and continue cooking for 2-3 minutes, stirring constantly.
- Remove the saucepan from the heat and pour the mixture into individual serving dishes or a large mold.
- Allow the tembleque to cool to room temperature, then refrigerate for at least 2 hours or until set.
- Serve chilled and garnish with a sprinkle of cinnamon or toasted coconut flakes, if desired.
