Tarta de Santiago
Tarta de Santiago, also known as Saint James Cake, is a traditional almond cake from Galicia, Spain. It's typically decorated with powdered sugar and the cross of Saint James.
Ingredients - Serves 8
- Butter - For greasing the pan
- Powdered sugar - For dusting
- Lemon zest - 1 teaspoon
- Eggs - 3 large
- Sugar - 200 grams
- Almonds - 200 grams, ground
Let's Get Started
- Preheat the oven to 180°C (350°F) and grease a round cake pan.
- In a bowl, mix together the ground almonds and sugar.
- In another bowl, beat the eggs and add the lemon zest.
- Combine the egg mixture with the almond mixture and mix well.
- Pour the batter into the prepared cake pan.
- Bake for 40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
- Let the cake cool, then dust with powdered sugar and stencil on the cross of Saint James if desired.
