  1. Preheat the oven to 180°C (350°F) and grease a round cake pan.
  2. In a bowl, mix together the ground almonds and sugar.
  3. In another bowl, beat the eggs and add the lemon zest.
  4. Combine the egg mixture with the almond mixture and mix well.
  5. Pour the batter into the prepared cake pan.
  6. Bake for 40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
  7. Let the cake cool, then dust with powdered sugar and stencil on the cross of Saint James if desired.
