Tapado Limonense

Ingredients - Serves 4
- Salt and pepper - To taste
- Cilantro - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Onion - 1, chopped
- Red bell pepper - 1, chopped
- Green plantains - 2, peeled and sliced
- Crab - 1/2 pound, cleaned and cracked
- Shrimp - 1/2 pound, peeled and deveined
- Fish - 1 pound, cut into chunks
- Coconut milk - 2 cups
Let's Get Started
- In a large pot, combine the coconut milk, fish, shrimp, crab, plantains, bell pepper, onion, garlic, and cilantro.
- Season with salt and pepper.
- Bring the mixture to a boil over medium-high heat.
- Reduce the heat to low, cover the pot, and simmer for about 1 hour, or until the seafood is cooked through and the flavors are well combined.
- Serve the stew hot, garnished with additional chopped cilantro if desired.
