Let's Get Started

  1. In a bowl, beat the eggs. Add the sugar, soy sauce, mirin, and salt, and mix well.
  2. Heat the oil in a tamagoyaki pan (or a small rectangular or round non-stick frying pan) over medium heat.
  3. Pour a thin layer of egg mixture in the pan, tilting to cover the bottom of the pan.
  4. When the egg is half done, roll it up towards one side of the pan with a spatula.
  5. Pour another thin layer of egg mixture in the pan, lifting the already rolled omelette to let the mixture flow underneath.
  6. When the new layer of egg is half done, roll the omelette towards the opposite side of the pan.
  7. Repeat the process until all the egg mixture is used.
  8. Remove the omelette from the pan and let it cool. Then slice it into pieces and serve.
