Takuan
Takuan is a traditional Japanese pickle made from daikon radish. It is often served as a side dish with sushi or other Japanese dishes.
Ingredients - Serves 8
- Sugar - 1/2 cup
- Rice vinegar - 1/2 cup
- Salt - 1/2 cup
- Daikon radish - 1 large

- Place the daikon slices in a large jar or container and pour the vinegar mixture over them.
- Cover the jar or container and refrigerate the takuan for at least 24 hours before serving.
