  2. In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over medium heat until the sugar and salt have dissolved. Let it cool.
  3. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let the rice cool to room temperature.
  4. Prepare the fresh fish by slicing it into thin, bite-sized pieces.
  5. Place a sheet of nori on a bamboo sushi mat. Wet your hands and spread a thin layer of rice on the nori, leaving about 1 inch free at the top.
  6. Place a few pieces of fish on the rice. Roll the sushi tightly using the bamboo mat.
  7. Repeat with the remaining ingredients.
  8. Slice the sushi rolls into bite-sized pieces using a sharp knife.
  9. Serve the sushi with soy sauce and wasabi.
