Tacos de Tripa
Tacos de tripa are a traditional Mexican street food made with crispy fried beef tripe.
Ingredients - Serves 4
- Salt and pepper - To taste
- Salsa - To taste
- Corn tortillas - 12
- Lime - 1, juiced
- Cilantro - 1/4 cup, chopped
- Garlic - 3 cloves, minced
- Onion - 1 medium, finely chopped
- Vegetable oil - 1/4 cup
- Beef tripe - 1 pound, cleaned and sliced
Let's Get Started
- In a large pot, bring water to a boil. Add the beef tripe and cook for 10 minutes to remove any impurities. Drain and rinse the tripe.
- In the same pot, add fresh water and bring to a boil again. Add the tripe, onion, and garlic. Reduce the heat to low and simmer for 1 hour, or until the tripe is tender.
- Remove the tripe from the pot and let it cool slightly. Slice it into thin strips.
- In a large skillet, heat the vegetable oil over medium-high heat. Add the tripe strips and cook until crispy and golden brown, about 5 minutes per side.
- Warm the corn tortillas on a griddle or in the microwave.
- To assemble the tacos, place a few strips of crispy tripe on each tortilla. Top with chopped cilantro, a squeeze of lime juice, and salsa. Season with salt and pepper to taste.
- Serve the tacos de tripa hot and enjoy!
