Ingredients - Serves 4

Let's Get Started

  1. In a large pot, bring water to a boil. Add the beef tripe and cook for 10 minutes to remove any impurities. Drain and rinse the tripe.
  2. In the same pot, add fresh water and bring to a boil again. Add the tripe, onion, and garlic. Reduce the heat to low and simmer for 1 hour, or until the tripe is tender.
  3. Remove the tripe from the pot and let it cool slightly. Slice it into thin strips.
  4. In a large skillet, heat the vegetable oil over medium-high heat. Add the tripe strips and cook until crispy and golden brown, about 5 minutes per side.
  5. Warm the corn tortillas on a griddle or in the microwave.
  6. To assemble the tacos, place a few strips of crispy tripe on each tortilla. Top with chopped cilantro, a squeeze of lime juice, and salsa. Season with salt and pepper to taste.
  7. Serve the tacos de tripa hot and enjoy!
