Szechuan Chicken
A spicy, flavorful dish made with diced chicken, peanuts, vegetables, and chili peppers.
Ingredients - Serves 4
- Dried red chili peppers - 6
- Vegetable oil - 2 tablespoons
- Ginger - 1 tablespoon, minced
- Garlic - 2 cloves, minced
- Szechuan sauce - 2 tablespoons
- Soy sauce - 2 tablespoons
- Red bell pepper - 1, diced
- Green bell pepper - 1, diced
- Peanuts - 1/2 cup
- Chicken breast - 2, diced
Let's Get Started
- Heat the oil in a wok or large frying pan over medium-high heat.
- Add the chicken and cook until it is no longer pink in the center.
- Remove the chicken from the pan and set it aside.
- In the same pan, add the garlic, ginger, and dried chili peppers. Cook for 2 minutes.
- Add the bell peppers and cook for another 2 minutes.
- Return the chicken to the pan and add the peanuts, soy sauce, and Szechuan sauce.
- Stir well to combine and cook for another 2 minutes, until everything is heated through.
- Serve the Szechuan chicken hot, with rice if desired.
