- Firm tofu - 8 ounces, sliced
- Sesame oil - 1 tablespoon
- Sugar - 1 tablespoon
- Chinese rice wine - 1/4 cup
- Soy sauce - 1/4 cup
- Garlic - 4 cloves, minced
- Ginger - 2-inch piece, sliced
- Dried red chili peppers - 10-15
- Sichuan peppercorns - 2 tablespoons
- Chicken or beef broth - 8 cups
Let's Get Started
- In a large pot, bring the chicken or beef broth to a boil.
- Add the Sichuan peppercorns, dried red chili peppers, ginger, and garlic to the broth. Simmer for 15 minutes to infuse the flavors.
- Strain the broth to remove the solids and return it to the pot.
- Stir in the soy sauce, Chinese rice wine, sugar, and sesame oil. Bring the broth back to a simmer.
- Prepare a variety of ingredients for cooking, such as sliced tofu, beef, lamb, shrimp, fish balls, mushrooms, cabbage, bean sprouts, green onions, and cilantro.
- Place the hot pot in the center of the table and set up a portable burner or induction cooktop.
- Each diner can choose their desired ingredients and cook them in the simmering broth at the table. Cooking times may vary depending on the ingredient.
- Once cooked, dip the cooked ingredients in a dipping sauce made with soy sauce, sesame oil, and chili oil.
