Swiss Chard and White Bean Stew

Ingredients - Serves 6
- Parmesan cheese - 1/4 cup, grated (for serving)
- Salt and pepper - To taste
- Dried thyme - 1 teaspoon
- Tomatoes - 1 can, diced
- Vegetable broth - 4 cups
- Cannellini beans - 2 cans, drained and rinsed
- Swiss chard - 1 bunch, stems removed and leaves chopped
- Garlic - 3 cloves, minced
- Onion - 1, diced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the chopped Swiss chard leaves and cook until wilted, about 3 minutes.
