Swiss Chard and Pesto Pasta
This delicious pasta dish combines the earthy flavors of Swiss chard with the vibrant taste of homemade pesto.
Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 1/4 cup
- Parmesan cheese - 1/2 cup, grated
- Garlic - 2 cloves
- Pine nuts - 1/4 cup
- Basil leaves - 1 cup, packed
- Pasta - 12 ounces
- Swiss chard - 1 bunch, stems removed and leaves chopped
Let's Get Started
- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
- In a food processor, combine the basil leaves, pine nuts, garlic, Parmesan cheese, olive oil, salt, and pepper. Process until smooth to make the pesto sauce.
- Heat a tablespoon of olive oil in a large skillet over medium heat. Add the Swiss chard and sauté until wilted, about 5 minutes.
- Add the cooked pasta to the skillet with the Swiss chard. Pour the pesto sauce over the pasta and toss to coat evenly.
- Cook for an additional 2-3 minutes, until the pasta is heated through.
- Serve hot and garnish with additional Parmesan cheese, if desired.
