Swiss Chard and Chicken Enchiladas
These delicious Swiss chard and chicken enchiladas are packed with flavor and nutrients.
Ingredients - Serves 6
- Fresh cilantro - 1/4 cup, chopped
- Monterey jack cheese - 1 cup, shredded
- Corn tortillas - 12
- Enchilada sauce - 2 cups
- Salt and pepper - To taste
- Chili powder - 1 teaspoon
- Cumin - 1 teaspoon
- Garlic - 3 cloves, minced
- Onion - 1, diced
- Chicken breast - 2 cups, cooked and shredded
- Swiss chard - 1 bunch, stems removed and leaves chopped
Let's Get Started
- Preheat the oven to 375°F.
- In a large skillet, heat some oil over medium heat. Add the onion and garlic and cook until softened.
- Add the Swiss chard and cook until wilted. Season with cumin, chili powder, salt, and pepper.
- Remove the skillet from heat and stir in the cooked and shredded chicken.
- Spread a thin layer of enchilada sauce on the bottom of a baking dish.
- Warm the corn tortillas in the microwave or on a skillet to make them pliable.
- Place a spoonful of the chicken and Swiss chard mixture onto each tortilla and roll it up tightly. Place the rolled enchiladas seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the enchiladas and sprinkle with shredded Monterey Jack cheese.
- Bake for 25-30 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
