Swiss Chard and Chicken Enchiladas

Ingredients - Serves 6

Let's Get Started

  1. Preheat the oven to 375°F.
  2. In a large skillet, heat some oil over medium heat. Add the onion and garlic and cook until softened.
  3. Add the Swiss chard and cook until wilted. Season with cumin, chili powder, salt, and pepper.
  4. Remove the skillet from heat and stir in the cooked and shredded chicken.
  5. Spread a thin layer of enchilada sauce on the bottom of a baking dish.
  6. Warm the corn tortillas in the microwave or on a skillet to make them pliable.
  7. Place a spoonful of the chicken and Swiss chard mixture onto each tortilla and roll it up tightly. Place the rolled enchiladas seam-side down in the baking dish.
  8. Pour the remaining enchilada sauce over the enchiladas and sprinkle with shredded Monterey Jack cheese.
  9. Bake for 25-30 minutes, or until the cheese is melted and bubbly.
  10. Garnish with fresh cilantro before serving.
