Sweet and Sour Tofu Stir Fry
This delicious sweet and sour tofu stir fry is packed with flavor and makes a satisfying vegetarian meal.
Ingredients - Serves 4
- Sesame seeds - 1 tablespoon, for garnish
- Green onions - 2, sliced, for garnish
- Cooked rice - 4 cups, for serving
- Black pepper - To taste
- Salt - To taste
- Vegetable oil - 2 tablespoons
- Water - 1/4 cup
- Cornstarch - 1 tablespoon
- Brown sugar - 2 tablespoons
- Ketchup - 2 tablespoons
- Rice vinegar - 2 tablespoons
- Soy sauce - 3 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Carrot - 1, sliced
- Pineapple chunks - 1 cup
- Onion - 1, sliced
- Bell peppers - 2, sliced
- Firm tofu - 1 block, cubed
Let's Get Started
- In a small bowl, whisk together soy sauce, rice vinegar, ketchup, brown sugar, cornstarch, and water to make the sweet and sour sauce. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add tofu cubes and cook until golden brown on all sides. Remove tofu from the skillet and set aside.
- In the same skillet, add sliced bell peppers, onion, carrot, garlic, and grated ginger. Stir fry for 3-4 minutes, until vegetables are slightly tender.
- Add pineapple chunks and cooked tofu back to the skillet.
- Pour the sweet and sour sauce over the tofu and vegetables. Stir well to coat everything evenly.
- Cook for an additional 2-3 minutes, until the sauce thickens and coats the tofu and vegetables.
- Season with salt and black pepper to taste.
- Serve the sweet and sour tofu stir fry over cooked rice.
- Garnish with sliced green onions and sesame seeds.
