Sweet and Sour Chicken Stir Fry
This delicious sweet and sour chicken stir fry is made with tender chicken, colorful vegetables, and a tangy sauce.
Ingredients - Serves 4
- Sesame seeds - 1 tablespoon, for garnish
- Green onions - 2, sliced, for garnish
- Cooked rice - 4 cups, for serving
- Salt and pepper - To taste
- Vegetable oil - 2 tablespoons
- Cornstarch - 1 tablespoon, dissolved in 2 tablespoons of water
- Brown sugar - 2 tablespoons
- Rice vinegar - 2 tablespoons
- Ketchup - 2 tablespoons
- Soy sauce - 3 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 2 cloves, minced
- Onion - 1, sliced
- Pineapple chunks - 1 cup
- Bell peppers - 1 red and 1 green, sliced
- Chicken breast - 2, boneless and skinless, cut into bite-sized pieces
Let's Get Started
- In a small bowl, whisk together soy sauce, ketchup, rice vinegar, brown sugar, and dissolved cornstarch. Set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken pieces and cook until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
- In the same skillet, add bell peppers, pineapple chunks, onion, garlic, and ginger. Stir fry for 3-4 minutes, until the vegetables are crisp-tender.
- Return the cooked chicken to the skillet and pour the sauce over the chicken and vegetables. Stir well to coat everything in the sauce.
- Cook for an additional 2-3 minutes, until the sauce thickens and coats the chicken and vegetables.
- Season with salt and pepper to taste.
- Serve the sweet and sour chicken stir fry over cooked rice.
- Garnish with sliced green onions and sesame seeds.
