  1. In a bowl, combine the minced garlic, lemongrass, fish sauce, honey, soy sauce, lime juice, vegetable oil, salt, and pepper to make the marinade.
  2. Place the pork chops in a shallow dish and pour the marinade over them. Make sure the chops are well coated. Marinate for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Remove the pork chops from the marinade and shake off any excess. Reserve the marinade for basting.
  5. Grill the pork chops for about 6-8 minutes per side, or until cooked through and nicely charred. Baste with the reserved marinade while grilling.
  6. Remove the pork chops from the grill and let them rest for a few minutes.
  7. Serve the Suon Nuong hot, garnished with fresh cilantro. Enjoy with steamed rice and your favorite Vietnamese dipping sauce.
