Summer Squash Pasta
A light and fresh pasta dish featuring summer squash, cherry tomatoes, and fresh basil.
Ingredients - Serves 4
- Salt and pepper - To taste
- Parmesan cheese - 1/2 cup, grated
- Fresh basil - 1/4 cup, chopped
- Cherry tomatoes - 1 cup, halved
- Summer squash - 2, thinly sliced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Pasta - 8 ounces
Let's Get Started
- Cook the pasta according to the package instructions. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat.
- Add the garlic and cook until fragrant, about 1 minute.
- Add the summer squash and cook until tender, about 5 minutes.
- Add the cherry tomatoes and cook until they start to soften, about 2 minutes.
- Stir in the cooked pasta, fresh basil, and half of the Parmesan cheese.
- Season with salt and pepper to taste.
- Serve the pasta with the remaining Parmesan cheese sprinkled on top.
