Suman
Suman is a traditional Filipino rice cake made from glutinous rice wrapped in banana leaves.
Ingredients - Serves 8
- Water - 1 cup
- Banana leaves - 8 pieces, cut into rectangles
- Salt - 1/2 teaspoon
- White sugar - 1/2 cup
- Coconut milk - 1 cup
- Glutinous rice - 2 cups
Let's Get Started
- Rinse the glutinous rice under cold water until the water runs clear.
- In a large bowl, combine the rinsed glutinous rice, coconut milk, white sugar, and salt. Mix well to ensure the rice is evenly coated.
- Place a banana leaf rectangle on a flat surface. Scoop about 1/4 cup of the rice mixture onto the center of the banana leaf.
- Fold the banana leaf over the rice, tucking in the sides to form a neat package. Secure with a toothpick if needed.
- Repeat the process with the remaining rice mixture and banana leaves.
- In a large pot, bring water to a boil. Place the wrapped suman in the pot and cook for about 45-60 minutes, or until the rice is fully cooked and the suman is firm.
- Remove the suman from the pot and let them cool slightly before serving.
- Serve the suman warm or at room temperature. Enjoy!
