Kao Niew Ma Muang
A traditional Thai dessert made with glutinous rice, fresh mango and coconut milk, and eaten with a spoon or sometimes the hands. Although originating in Thailand, it is consumed throughout the Indochina region.
Ingredients - Serves 4
- Salt - 1/4 teaspoon
- Sugar - 1/2 cup
- Coconut milk - 1 cup
- Mangoes - 2, peeled and sliced
- Water - 2 cups
- Glutinous white rice - 1 cup
Let's Get Started
- Rinse the glutinous rice until the water runs clear. Soak for at least 1 hour, or overnight.
- Drain the rice and steam over medium heat for 20 minutes, or until the rice is cooked through.
- While the rice is cooking, heat the coconut milk, sugar, and salt in a saucepan over medium heat. Stir until the sugar is dissolved.
- Once the rice is cooked, transfer it to a bowl and pour over half of the coconut milk mixture. Stir to combine and let it sit for 20 minutes to absorb the coconut milk.
- Serve the rice warm or at room temperature with the sliced mangoes. Drizzle the remaining coconut milk mixture over the top.
