Stuffed Bell Peppers
These delicious stuffed bell peppers are filled with a flavorful mixture of ground beef, rice, vegetables, and cheese.
Ingredients - Serves 6
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Shredded cheddar cheese - 1 cup
- Frozen peas - 1/2 cup
- Frozen corn - 1/2 cup
- Canned diced tomatoes - 1 cup
- Tomato sauce - 1 cup
- Garlic - 2 cloves, minced
- Onion - 1, diced
- Cooked rice - 1 cup
- Ground beef - 1 pound
- Bell peppers - 6
Let's Get Started
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a large skillet, heat the olive oil over medium heat.
- Add the diced onion and minced garlic, and cook until the onion is translucent.
- Add the ground beef to the skillet and cook until browned.
- Stir in the cooked rice, tomato sauce, diced tomatoes, frozen corn, frozen peas, salt, and pepper. Cook for an additional 5 minutes.
- Fill each bell pepper with the beef and rice mixture.
- Place the stuffed bell peppers in a baking dish and cover with foil.
- Bake for 30 minutes, then remove the foil and sprinkle the shredded cheddar cheese on top of each pepper.
- Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy!
