Stuffed Bell Peppers

Ingredients - Serves 6

Let's Get Started

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, heat the olive oil over medium heat.
  4. Add the diced onion and minced garlic, and cook until the onion is translucent.
  5. Add the ground beef to the skillet and cook until browned.
  6. Stir in the cooked rice, tomato sauce, diced tomatoes, frozen corn, frozen peas, salt, and pepper. Cook for an additional 5 minutes.
  7. Fill each bell pepper with the beef and rice mixture.
  8. Place the stuffed bell peppers in a baking dish and cover with foil.
  9. Bake for 30 minutes, then remove the foil and sprinkle the shredded cheddar cheese on top of each pepper.
  10. Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  11. Serve hot and enjoy!
