Stuffed Artichokes
These stuffed artichokes are a perfect blend of Italian breadcrumbs, cheese, and herbs baked until golden brown.
Ingredients - Serves 4
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Lemon - 1, juiced
- Parsley - 1 tablespoon, chopped
- Garlic - 2 cloves, minced
- Parmesan cheese - 1/2 cup, grated
- Italian breadcrumbs - 1 cup
- Artichokes - 4 large
Let's Get Started
- Preheat the oven to 375°F.
- Trim the stems and tops of the artichokes, then scoop out the choke.
- In a bowl, combine the breadcrumbs, cheese, garlic, parsley, lemon juice, olive oil, salt, and pepper.
- Stuff the artichokes with the breadcrumb mixture.
- Place the artichokes in a baking dish and add enough water to come halfway up the sides of the artichokes.
- Cover with foil and bake for 45 minutes.
- Remove the foil and bake for another 15 minutes, or until the tops are golden brown.
- Serve warm.
