Strawberry Shortcake

Ingredients - Serves 6

Let's Get Started

  1. In a mixing bowl, combine the strawberries and sugar. Set aside to macerate for at least 30 minutes.
  2. Preheat your oven to 425°F (220°C).
  3. In a separate bowl, combine the flour, baking powder, and salt.
  4. Add the cold, cubed butter to the flour mixture. Use your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.
  5. Pour in the milk and stir until just combined.
  6. Drop spoonfuls of the dough onto a baking sheet, forming 6 shortcakes.
  7. Bake for 15-20 minutes, or until the shortcakes are golden brown.
  8. Allow the shortcakes to cool slightly, then split them in half.
  9. Spoon some of the macerated strawberries onto each shortcake bottom, top with a dollop of whipped cream, then place the other half of the shortcake on top.
  10. Serve the strawberry shortcakes immediately, with extra strawberries and whipped cream on the side.
