Ingredients - Serves 6
- Whipped cream - To serve
- Milk - 2/3 cup
- Unsalted butter - 1/2 cup, cold and cubed
- Salt - 1/2 teaspoon
- Baking powder - 1 tablespoon
- All-purpose flour - 2 cups
- Granulated sugar - 1/2 cup
- Strawberries - 1 pound, hulled and sliced
Let's Get Started
- In a mixing bowl, combine the strawberries and sugar. Set aside to macerate for at least 30 minutes.
- Preheat your oven to 425°F (220°C).
- In a separate bowl, combine the flour, baking powder, and salt.
- Add the cold, cubed butter to the flour mixture. Use your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.
- Pour in the milk and stir until just combined.
- Drop spoonfuls of the dough onto a baking sheet, forming 6 shortcakes.
- Bake for 15-20 minutes, or until the shortcakes are golden brown.
- Allow the shortcakes to cool slightly, then split them in half.
- Spoon some of the macerated strawberries onto each shortcake bottom, top with a dollop of whipped cream, then place the other half of the shortcake on top.
- Serve the strawberry shortcakes immediately, with extra strawberries and whipped cream on the side.
