  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. Heat vegetable oil in a large pan or wok over medium-high heat.
  3. Add minced garlic and grated ginger to the pan and sauté for 1 minute.
  4. Add sliced bell peppers, julienned carrots, and broccoli florets to the pan. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  5. In a small bowl, whisk together soy sauce and oyster sauce. Pour the sauce mixture over the vegetables in the pan.
  6. Add the cooked udon noodles to the pan and toss everything together to coat the noodles and vegetables with the sauce.
  7. Drizzle sesame oil over the noodles and stir-fry for an additional 2 minutes.
  8. Garnish with chopped green onions and sesame seeds before serving.
