Stifado
Stifado is a traditional Greek dish, a hearty beef stew made with shallots, red wine, and a wonderful blend of spices.
Ingredients - Serves 6
- Salt and pepper - To taste
- Bay leaves - 2
- Allspice berries - 6
- Cinnamon stick - 1
- Tomato paste - 2 tablespoons
- Red wine - 1 cup
- Garlic - 4 cloves, minced
- Olive oil - 3 tablespoons
- Shallots - 20, peeled
- Beef stew meat - 2 pounds
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the beef and brown on all sides, then remove from the pot and set aside.
- In the same pot, add the shallots and cook until they start to soften.
- Add the garlic and cook for another minute.
- Return the beef to the pot, add the red wine, and bring to a simmer.
- Stir in the tomato paste, cinnamon stick, allspice berries, bay leaves, salt, and pepper.
- Cover the pot and simmer for about 3 hours, until the beef is tender and the flavors are well combined.
- Serve the stifado hot, with bread or rice on the side.
