Stewed Tomatoes
A simple and delicious side dish made with fresh tomatoes, onions, and herbs.
Ingredients - Serves 4
- Fresh oregano - 1 tablespoon, chopped
- Fresh basil - 2 tablespoons, chopped
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Sugar - 1 teaspoon
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Fresh tomatoes - 4 large
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the tomatoes, sugar, salt, and pepper. Stir to combine.
- Reduce the heat to low, cover the skillet, and let the tomatoes stew for 20 minutes.
- Uncover the skillet and stir in the basil and oregano. Cook for an additional 10 minutes, until the tomatoes are soft and the flavors have melded together.
- Serve the stewed tomatoes warm, garnished with additional fresh herbs if desired.
