Steelhead with Pesto Pasta
This delicious steelhead trout is served with a flavorful pesto pasta.
Ingredients - Serves 2
- Parmesan cheese - 1/4 cup, grated
- Fresh basil - 1/4 cup, chopped
- Salt and pepper - To taste
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Cherry tomatoes - 1 cup, halved
- Pasta - 8 ounces
- Pesto sauce - 1/4 cup
- Steelhead trout fillets - 2 fillets
Let's Get Started
- Cook the pasta according to package instructions. Drain and set aside.
- Season the steelhead trout fillets with salt and pepper.
- Heat olive oil in a skillet over medium heat. Add the trout fillets and cook for 3-4 minutes per side, or until cooked through.
- In a separate pan, heat olive oil over medium heat. Add minced garlic and cook until fragrant.
- Add cherry tomatoes to the pan and cook for 2-3 minutes, until slightly softened.
- Add cooked pasta to the pan and toss with pesto sauce.
- Remove from heat and stir in chopped fresh basil.
- Serve the steelhead trout fillets on top of the pesto pasta.
- Sprinkle with grated Parmesan cheese.
