Sri Lankan Curry
This aromatic and flavorful Sri Lankan curry is made with a blend of spices, coconut milk, and a variety of vegetables or meat.
Ingredients - Serves 4
- Fresh cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Vegetables or meat - 2 cups, diced
- Coconut milk - 1 can (400ml)
- Salt - To taste
- Chili powder - 1/2 teaspoon
- Cardamom - 1/2 teaspoon
- Cinnamon - 1/2 teaspoon
- Coriander - 1 teaspoon
- Cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Curry powder - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 3 cloves, minced
- Onion - 1 large, finely chopped
- Coconut oil - 2 tablespoons
Let's Get Started
- Heat coconut oil in a large pan over medium heat.
- Add the chopped onion and cook until it becomes translucent.
- Add minced garlic and grated ginger, and cook for another minute.
- In a small bowl, mix together curry powder, turmeric, cumin, coriander, cinnamon, cardamom, chili powder, and salt.
- Add the spice mixture to the pan and cook for a minute, stirring constantly.
- Pour in the coconut milk and bring to a simmer.
- Add the diced vegetables or meat to the pan and stir well to coat them with the curry sauce.
- Cover the pan and let it simmer for about 20-30 minutes, or until the vegetables are tender or the meat is cooked through.
- Stir in lime juice and fresh cilantro.
- Serve hot with steamed rice or naan bread.
