Sponge Candy
Sponge candy is a type of toffee, also known as honeycomb toffee or cinder toffee. These airy yet crunchy confections feature a hint of molasses flavor and are often coated in chocolate.
Ingredients - Serves 10
- Chocolate - 2 cups, melted
- Baking soda - 1 tablespoon
- Water - 1/3 cup
- Light corn syrup - 1/2 cup
- Granulated sugar - 2 cups
Let's Get Started
- In a large saucepan, combine the sugar, corn syrup, and water. Stir over medium heat until the sugar has dissolved.
- Without stirring, heat the mixture to 300°F (hard-crack stage) on a candy thermometer. Remove from heat.
- Immediately stir in the baking soda. Pour the mixture onto a greased baking sheet, but do not spread it out.
- Allow the candy to cool completely, then break it into pieces.
- Dip each piece into the melted chocolate, then place on waxed paper to set.
