  1. Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.
  2. Pop the popcorn kernels using a popcorn maker or a large pot with a lid.
  3. In a saucepan over medium heat, combine the sugar, butter, corn syrup, and salt. Bring to a boil while stirring consistently.
  4. Allow the mixture to boil without stirring for 4 minutes, then remove from heat and stir in the vanilla and baking soda.
  5. Immediately pour the caramel sauce over the popcorn. Use tongs to toss and coat the popcorn with the caramel sauce.
  6. Transfer the coated popcorn to the prepared baking sheet, spreading it out evenly.
  7. Bake in the preheated oven for 45 minutes, stirring every 15 minutes.
  8. Allow the caramel popcorn to cool on the baking sheet before breaking it into pieces and serving.
